We found this going in one of the garden beds. I pulled it today and it's four times the size showing in the photo. Any idea what it is?

We just cut it open. It smells like a radish. It's 3.5 lbs.

Did you plant Daikon radishes? chuckle- they are used as a cover crop because of their ability to 'till the soil'
No. We just planted our first cover crop in another bed. It's rye.
BTW - When we cut it open it was hallow in the center.

Daikon radish has a long white root. It is used as a cover crop with 100% winter kill after a freeze that is also an edible compostable plant
It is also a 'nurse plant crop' that repels bugs close to other desirable plants in your summer garden, the pithy/hollow root is from rapid growth without sufficient water as well as simply grown too old
I have read about daikon radishes and have purchased some (minus the greens) from the market. We have not knowingly planted any. It is possible that a daikon seed was in some of the items that we seeded into the bed this spring.
