Pork Stew

Mount Pleasant, PA(Zone 6a)

This is the result of a "I don't *want* to run to the grocery store" night.

1-2 lb pork stew meat
2-3 packages frozen vegetables of your choice (or use fresh this was kind of a mish mash of what I had on hand in the winter) I used green beans, corn, & mixed veg with lima beans.
2-3 potatoes peeled & diced (I usually do a med-small dice)
1 large yellow onion diced or halved & cut into strips
1-2 large cans tomato sauce
1 can petite diced tomatoes (or stewed whole diced)
Water equal to the amount of tomato sauce.
1/4 cup brown sugar
Chipolte pepper to taste (I like to use Pampered Chefs chipolte blend 1-2Tbsp.) If you aren't using the chipolte I'd prob eliminate the brown sugar & substitute garlic.
Salt to taste
Black pepper to taste.

Saute the pork in a pot that will fit all your ingredients until it starts to brown. Sprinkle with salt & pepper while cooking.

Add onion & saute until it starts to soften.

Add potatoes, tomato sauce, diced tomatoes, brown sugar, chipolte and water. Reduce to a simmer & simmer 30 min.

Add all your veggies @ this point & simmer until they cook, sauce thickens & potatoes are done.

Serve in bowls.

This makes a nice thick hearty stew. Great on a chilly night. I add as many veggies as I can fit into the pot. The brown sugar takes the heat from the chipolte so that my kids will eat it w/o complaint lol.
