Pay Back Time Rice Pudding

For all of the fattening recipes I've been copying, thought I should return the favor. You can add raisins if you want, soaked in rum might be good, but haven't tried it yet. I've been using Craisins in mine. Got this from The New York Times several years ago.

ARROZ CON LECHE

4 cups whole milk
1 cup arborrio rice
2 cups water
1/8 teaspoon salt
1 cinnamon stick
1/4 cup sugar
1 teaspoon vanilla
ground cinnamon

Warm the milk; heat the rice with two (2) cups water, salt and cinnamon stick (to simmering). Slowly add milk -- 1/2 cup at a time -- to the simmering rice, stirring constantly. Let most of the milk absorb, stirring constantly. Add next portion of milk, let absorb, continuing until all milk is used. Add the sugar and vanilla. Stop heating when the pudding is still very soupy -- 20 minutes or so. Sprinkle with cinnamon.
