I grew this root and just cooked some up for the first time. They say it should taste similar to Oysters but I think it tastes like Artichoke heart.
They grow like Carrots. I would say it is pretty good.

It is not Jerusalem root.
I skinned it and steamed it up with spinach.

I wouldnt call it pretty but the taste was good.
They're supposed to be VERY good for you too.
Oyster plant is one of our historic vegetables. Cultivation dates from the 1600s and was routinely grown during the Depression and in the WWII Patriotic Gardens. My MIL loved to add it into creamy soups and called it Mock Oyster Stew...I grew it and she cooked it and it was wonderful....wish I had watched her closer because...of course...mine does not come out the same! LOL
