Sulfur on Bull Thistle

A Sulfur clings to what I believe is a Bull Thistle in the brushland north of Edinburg.. I've read that Bull Thistle is edible. I wonder if anyone has a recipe or has ever eaten any?

The thistles are frequently used as host plants for the butterflies. Like the American Lady and Painted Lady.....they lay eggs on several species of thistle.
Most if you noticed like the links you posted Becky are invasive. A funny note a while back a friend was in a garden club and a thistle was their logo!

That's actually a male Checkered White (Pontia protodice). Thistles are excellent nectar plants for a lot of different species of butterflies and moths.

I really like thistles especially Texas thistle, the flowers are so pretty and the butterflies love them. I have one in the flower bed that is at least 5 feet tall.
