Here in zone 6, I started my Mexican Sunflowers @ May 1. They grew and grew and............didn't have flowers til Sept. And those flowers were so high, we couldn't see them! Full sun; hot, hot. So my question is: can I pinch the plants back once or twice to get them to bush out (and be shorter)? Or might this simply delay the blossoms further?

try some fiesta del sol mexican sun flowers. It is much more compact, and the BF's love it.
I had the dwarf "Goldfinger" variety once, and they were also a hit with the butterflies. Regular Mexican sunflowers can get huge, I'm not sure pinching back the plants would help much.

I cut and prune mine to control them a bit.
And I think some varieties have more abundant nectar than others. Torch work the best for us.
