They have come up and look fine but for a paleness. Epsom salts? Compost? I planted them in "organic" garden soil.

brigidlily - did you give them any fertilizer?
Although I've read that legumes don't need fertilizer, it has been my personal experience that they do. Maybe not as much as some other vegetables, but I get better yields if I feed them. A low nitrogren fertilizer is best, otherwise you are likely to get more leaves than beans.
I googled it and apparently they can go through a yellowish phase, and then green up. I think I will use a little fish emulsion on them.
