Flavored Vinegar

Ozark, MO(Zone 6a)

I like using supermarket versions of "balsamic vinegar" along with olive oil on sandwiches and salads. These aren't real aged-for-12+-years balsamic vinegars from Italy, they're just cider or malt vinegars flavored up with various herbs. Still, they're fairly expensive, so I decided to make my own.

I put some apple cider vinegar in a pint jar, and added a little sugar along with some home-grown basil, home-grown thyme, minced onion, and minced garlic to taste. The flavor and aroma seem very good - and my plan is to leave it for a week, then strain the solids out with a coffee filter paper and bottle the flavored vinegar for use. Does anyone else here do this, and do you have any suggestions for other herbs/spices to add?
