How To Correct a Sour Relish

Phoenix, AZ(Zone 9b)

Hi, I finally cooked down all my green tomatoes that I harvested due to the plants being nipped by frost. The recipe calls for lots of onion, garlic, some red peppersand jalapenos, a couple of tart apples, fresh lime juice, cumin and a small amount of cilantro.

It's a bit too sour for my taste. Can anyone recommend a 'fix'? I know there's some very experienced and creative folks on this board so I hope you'll let me know of some ideas to de-sour it. Otherwise, it's history. Thanks peeps.
