Acorn Squash

Northern Michigan, MI(Zone 5a)

Had to have two dishes for potluck at work today. Decided I have been so short on time, today makes 10 days in a row at work, I would go super simple. I haven't even baked pies for my family yet for Thanksgiving. So I really wanted to go easy. I was exhausted after work last night.

Decided I would make deviled eggs (2-doz) with jalapeno ranch dressing in place of mayo. Also decided I would make a slow cooker of acorn squash. The garden really kicked those out this year and they are taking up too much space.

Last night I cleaned 6 large squash and roasted them in the oven. Then scooped out the meat and put in the crockpot then added the following...

stick of butter
maple syrup
jar of homemade orange marmalade
brown sugar
pumpkin pie spice
about 1 cup of Capt Morgan rum

Let that all meld together on warm over night and I have to say it is the best Acorn squash I have made.
