It must be getting close to the most wonderful time of the year. (I heart Thanksgiving.)
I know this because:
1. At 5 this morning, I was making macaroni and cheese for two office holiday lunches today - special requests from the hub and eldest son;
2. My bunco group meets tonight and we're collecting gifts to send overseas to children in war-torn areas; and
3. After practice, swimmer girl is heading over to join a group of girls putting together soup-mix-in-a-jar gifts for gifts to distribute next month.
That leaves just two eating at home tonight. I think I'm going to leave the manly men in my family with a casserole of white chicken/green chili enchiladas they can heat and eat along with some refried beans and who-knows-what. A bag of frozen shredded chicken makes the enchiladas easy to put together, but I need to get a pot of pintos going ASAP.
