COW PEAS: what to do with the brown ones?

I have just harvested those COW PEAS. They are the last of the season.
What shall I do with the brown ones?
They are dried already.
Can I eat them?
I know the other option will be to keep them for next year .. but I already have other seeds.

I will appreciate any suggestions.

Probably more people eat dried cowpeas than do green shellies. If you don't need them for seed cook them for New Year's dinner.

I thought cowpeas were meant to be dried and cooked that way!! I guess whatever works for you-!

drthor, The traditional way is to boil them with a bit of salt pork ( ham hocks are good) as you would Navy or pinto beans. Taste is quite different of course and they cook in less time. In the south they are a tradition when eaten on New Years Day as a symbol of prosperity. The peas represent hard money, collards for folding money. Flavor of different varieties can be quite different but that is also true of dried beans.
