I have just harvested those COW PEAS. They are the last of the season.
What shall I do with the brown ones?
They are dried already.
Can I eat them?
I know the other option will be to keep them for next year .. but I already have other seeds.
I will appreciate any suggestions.
COW PEAS: what to do with the brown ones?
Probably more people eat dried cowpeas than do green shellies. If you don't need them for seed cook them for New Year's dinner.
farmedill,
really?
Do I just boil them?
I thought cowpeas were meant to be dried and cooked that way!! I guess whatever works for you-!
drthor, The traditional way is to boil them with a bit of salt pork ( ham hocks are good) as you would Navy or pinto beans. Taste is quite different of course and they cook in less time. In the south they are a tradition when eaten on New Years Day as a symbol of prosperity. The peas represent hard money, collards for folding money. Her are some more fine tuned recipes http://southernfood.about.com/od/blackeyedpeas/r/bl81231e.htm Most of these specify Blackeyed peas, but hold for all cowpeas. Flavor of different varieties can be quite different but that is also true of dried beans. If you are vegetarian you can try this one http://moroccanfood.about.com/od/vegetarianmaindishes/r/Moroccan_black_eyed_peas_cowpeas_vegetarian.htm http://www.africanfoods.co.uk/cowpeas-recipe.html
