My "dessert" will be chilled watermelon from one of the melons I harvested a few days ago from my garden. :)

It was a wonderful day! Left with only a few plants :-), lots of hugs and a very full belly! Great food as always!

For those who wanted my recipe :

Roasted Vegetable Recipe:

Cook up brown rice and add some turmeric and cumin so that it had a golden color

Roasted Vegetables
4 red peppers cut in strips or squares
2 sliced onions
grape tomatoes add in last 20 minutes and cook until blistered

Tossed with Paul Newman's Low Fat Asian Sesame Dressing,
Spread single layer on a baking sheet
Bake 425 F about 45 min. Mix every 15 - 20 minutes. Careful when you open the oven...very steamy!


Roasted Butternut Squash:
mix cubes with ~2 tbsp olive oil and a bit more than tbsp balsamic vinegar and kosher salt. Cook @ 400 on a baking sheet until tender ~ 30 min

Chickpeas
Drain can of chickpeas and rinse.
Heat chickpeas in saute pan until water is gone and are slightly toasted.
Add chickpeas with 2 tbsp balsamic vinegar, 2 tbsp olive oil, 2-3 crushed garlic, lots of oregano, salt

After all the components are cooked ,layer rice, veggies and butternut squash and chickpeas.

Easier to do than to read this all!!!!!!!!!!!!
