how can i rescue my mint?

I planted mint and lemon balm in a raised bed that is mostly sun in the morning and mid-day, but shade from 3 pm on.

the mint 'took out' the lemon balm in a matter of months, then went ballistic all over the shady corner of the raised bed.

Now, it's all gangly. there are mint leaves towards the ends of the stems, but the stems are all really long and bare.

Should I cut it back, or just try and get some mint somewhere and start over in a pot?

Cut it back to about 5-6" and dig out a lot (or most) of the roots that have spread. If it were me, I'd dig out a good chunk of the root mass, transplant it to a big pot and bury the pot to the rim back in the bed. Even with aggressive treatment every year, my mint took over the bed, but now it's mostly confined. It does get root-bound in 2-3 years but there's usually enough good root stock to cut away the bad and replant.

My lemon balm is taking over another bed, so I need to figure what to do for it.

I cut mine back, as well as the bee balm, catmint, and pulled the basil right out. Now, the mint has rejuvinated, and the bee balm looks good and green, and the basil has come back. I have mine all in containers though, and they are only getting a cup of water per day right now.
