Potato Salad w/ Bacon

Cave Creek, AZ(Zone 9b)

Someone gave me this recipe verbally so the measurements are not tried and true (yet) I made a trial batch last night to test before making the motherlode for next weekend and was it GOOD!

6-8 servings

4 fists of potatoes chopped or sliced and boiled in salted water until potato salad texture(my best measuring device)
6-8 slices of bacon fried crisp... set aside
1 large onion chopped medium coarse fried until soft in the pan drippings....drain and put in the bowl you'll mix your salad in
2 hard boiled eggs chopped
1-2 scallions (both green and white portion) chopped for color extra crunch
Mayo to mix
a dusting of dill

so good I want to have it now for breakfast
