I bought a watermelon, hoping to get some seeds from it. Naturally it turned out to be seedless, except for one seed. Is this how they are planted with just that one seed?

Nope. The parent has plenty of seeds. It is crossed ( patented process) so the offspring are sterile. some seeds show up in "seedless" watermelons, but are normally sterile.
