I'd like the recipe for sopapilla cheesecake that someone brought to a roundup in Arlington a couple of years ago. :)

Stephanie if you are talking about the ( Italian Sausage Casserole ) here it it,

1 package of mild Italian sausage
1 can of chopped tomatoes with Italian seasoning
1 can of mushroom pieces.

Put sausage on a cookie sheet and bake at 350 until brown.
Drain fat and let sausage get cool enough to handle.
Chop it into small pieces, I usually slice and then cut the slices into three pieces.

Put sausage in oven proof casserole, put the mushrooms and tomatoes over it and and toss.

Bake at 350 for 1 hour.

I usually double the recipe when I bring it to the swaps.

I don't usually cook anything too special for RUs, but one fall, knowing it would be a little chilly, I brought our favorite spicy soup and cornbread. Will dmail it to you Catz.

Sopapilla Cheesecake

2 cans crescent rolls
1-8oz cream cheese
1 c. sugar
1 tsp. vanilla

Spread crescent rolls on bottom of 9x13 pan. Blend sugar,
vanilla, and cream cheese. Spread cream cheese mixture
on bottom layer of rolls. Take the other package of rolls and
spread on top of the cream cheese. Sprinkle with mixture of
1/2 c. sugar, 1 tsp. cinnamon and 1 stick of butter (melted).
Bake for 30 minutes at 350 degrees.

Yes but Smockette bakes the bottom crescent rolls for 10 min before adding the filling. She also doubles the filling 2-8oz cream cheese 2 c. sugar 2 tsp. vanilla. mmmmmmm mmmmmm good.

Kate not sure which one you mean but it reminds me of one I brought to one of my first RUs. My Mom gave me the receipe. Great cold salad...need to look that up.

I made some really good pea salad once - not for the RU, but maybe it's the same?

You just mix a couple of bags of frozen peas (thawed and drained) with finely chopped onion and celery, finely shredded sharp cheddar, mayonnaise and a touch of mustard. Salt and pepper and chopped hard-boiled eggs if you like them.

[Sopapilla Cheesecake

OK just talked to Smockette and she told me for the Arlington RU she used a smaller pan which made the filling thicker using 2 cream cheese. She thought she was doubling it as she loves the filling. Last night Smockette found a recipe on DG from back when she first made it. She said this made a whole lot more sense. I agree as she made it for Jacksonville in a 9 x 13 pan. I was not impressed but said nothing to her. I thought I was losing my mind as I remembered loving it. I just told her today when she told me she found the one with 3 cream cheese that it makes more sense and I told her it did to me too.
I copied the above recipe from a thread Roadrunner posted it to. So here is the right one Smockette makes. mmmmm mmmm good!!! Smockette and I licked the beaters the night she made it for Jacksonville. *grin*

Smockette and I were both at this RU in Houston. http://davesgarden.com/community/forums/t/883454/?hl=Sopapilla+Cheesecake. This uses 2 sticks of butter but I think the one for the top would work. Also someone on this thread said the used Splenda instead of sugar and it worked great.

Oh stephanietx, that's so funny - two huge threads on sopapilla cheesecake! And what a lot of good ideas on those threads.

I made a batch last night and the kid who never likes anything thinks they're "awesome."

I'm going to try apple and lemon and cherry.... but not all today. Heh heh heh..... :D

Yes, I'm the one that makes the Sopapilla Cheesecake but it originally came fr Karlae!!! He gets the credit for such a great recipe!!!
Just so you know how I came across the 'original' recipe, I'm in Indy for the 500 & my God-son told me that his dad had taken the recipe off the fridge, where I put it for him last year. He got on his laptop & pulled up Karlae's recipe!!! Leave it to the kids!!! lol

Just got back from the grocery store and found that they sell the crescent dough in sheets, not cut into crescents. I'll bet it was this sopapilla recipe that did it! LOL! The recipe went viral and Pillsbury said, "Hmmm.... "

I bought some cherry pie filling and some key lime pie filling too.

I really don't *need* something this good to come along right now. Why doesn't something that's carb-free taste as good as this? :D
