Too late to plant potatoes..

....which I just discovered sprouting in my pantry? These are organic, so are fine as seed potatoes, but I seem to recall in Zone 7-8, St Pats day is the usual date to plant. Anyone planted this late in my area (Central NC) or further south?

I have planted them late before yotedog, and I got a good crop (but not THIS late!). I just put mine in last week,no sign of sprouts yet which is mildly alarming (potatoes have usually popped up within a week in past years when planted in early March). I suspect I'll get lower production and smaller potatoes this year, but they'll taste just as good!

How deep do you plant yours? I haven't grown them in years. I dug a trench, put them in the bottom and covered them lightly (maybe 2 inches of soil on top?). Wasn't sure if I should leave the sprouts showing, as the last time I planted potatoes, they weren't sprouted so much. I suspect some of them will rot, since they were so sprouted, so I put two at each spot. Figured maybe one will grow, one will rot. Do I harvest them in summer or fall in this zone?

OK, yotedog, I jumped the gun a little bit on the germination thing. Seven of the 21 I planted have sprouted (less than 7 days!). I only plant them 2"-3" deep initially because I mound them up with compost the minute they emerge (makes harvesting MUCH easier!). So I'll be hauling compost for them next week. The "Yukon gold" I planted are considerably behind the "Red Pontiac" at this point, but that's normal. I'll be harvesting those delicious red "New Potatoes" in 6 weeks, and have young
Yukon Gold a few weeks after that... Lawsey, they're tasty good!

"Lawsey"--I love that expression!! Ok, sounds like I planted mine ok. I, too, will mound them up as they grow. Hoping they do something! If not, they will at least compost...

The Red Pontiacs are 8" tall , and the Yukon gold 4" at this point, and may not realize I planted them too late! If the weather heats up fast this year, the crop will be small in size---plenty of them, but all small in size. Doesn't bother me much with the Red Pontiacs, because we eat most of them as "New Potatoes" and few make it to mature size. But I may not get many of those big "Buttery" Yukon Gold spuds for smashed potatoes. Hate that---they're my favorite---but strictly my fault. Will post on my first "dig"...

"smashed potatoes" ...love it! that's what I always called them as a kid and my gram used to tease me about that! she watched me everyday after school and my normal snack was smashed potato's and a little fried hamburger with red kidney beans (yea I know...I was a weird little kid)

My 10 year old grand daughter loves beans of any kind. She is just a tiny little thing and she can polish off a whole can of Bush's beans by herself. I tell her she didn't get that from my side of the family, LOL.

About half of mine came up, and are growing nicely. I agree, I won't get much, but hey, I couldn't eat these, so any I get will be a bonus.
