A couple of years ago I purchased mint from the supermarket and placed it in a jar of plain water to see if it would root.
Here's what that little sprig of mint looks like now:

They'll take over half the world if given a chance. I have largish rocks surrounding mine.
They really look pretty now--so fresh and green.
