Delicious low fat, healthy biscuits/cookies Serves 6 people
Ingredients
1 cup self-raising flour
1/2 teaspoon ground cinnamon
40g margarine or butter
1 apple, grated
1/3 cup orange juice (or other pure juice)
1/2 cup rolled oats
2 tablespoons golden syrup
1 cup icing sugar
1 tablespoon passionfruit pulp
1 teaspoon margarine or butter
1 teaspoon skim milk (approx.)
Directions
1. Sift flour and cinnamon into a bowl, rub in the butter/margarine.
2. Stir in the grated apple, juice, oats and golden syrup.
3. Drop heaped spoonfuls onto a non-stick or lighty sprayed oven tray.
4. Bake in moderate oven 180o for about 40 minutes or until lightly browned.
Icing:
1. Sift icing sugar into a heatproof bowl, stir in passionfruit and butter/margarine, then enough milk to make a stiff paste.
2. Stir over hot water until spreadable. Coat biscuits.
Suitable to freeze. (before icing)
Not suitable to microwave.
