Thanks very much Farmerdill. It may well be a bit late but I might give it a try. My little spot here on earth is on the cold side compared to the surrounding neighborhood, so I may get lucky. I will look for these seed varieties locally and there's always next year. Not enough time to mail order them this Spring.

I too started mine the first week in February. They are slow. You can try again in late summer for a Fall crop.

Don't know where you are in GA, but I didn't know we had anywhere in 6b.

Well, I guess I'm not in 6b anymore, been bumped up to 7. But my temps are more in line with Asheville, so I stick with 6b. To me, it doesn't really matter what you call it, just what the temperatures are outside.
Since I wasn't able to find Farmerdill's suggestions, I decided to skip the whole seed thing for now. I bought half a dozen plants from a local nursery. Don't know why I bother, cauliflower isn't my favorite vegetable anyway, but I just like to grow everything.

Deep South Coastal, TX(Zone 10a)

Cassius is a good variety to grow, but the seeds are getting hard to find. It performs well in winter for us, can take some freezing temps without buttoning and has a good flavor. Cheddar is another easy one, the heads don't need protection from the sun and it has a fantastic flavor, very sweet and has more betacarotene due to its orange color.
Have you tried raw cauliflower dipped in shrimp coctail sauce? The texture is very similar to shrimp and is very good this way. Also try drizzling with olive oil and roasting in the oven, completely different taste.
