Sous Vide?

Does anyone here do this method of cooking?

I just ordered parts to convert a turkey roaster to a cheese vat, and there's just one very inexpensive more step to make it useful for sous vide. Sounds like it makes very tender meats which appeals to me since my store-bought teeth don't chew very well!
