I do demos at a local store. Recently I demonstrated a sugar free cake and the icing. The cakemix called for l c. water, 1/3 c. oil, and 3 eggs. A customer told me that she had made the cake from the mix, but she added a diet coke instead of all the added ingredients..just a diet coke. She said that it turned out great. She also told me that you could use a can of pumpkin instead of the required add ins also. Both of these methods would really cut down on the fat and cholesterol in the recipe.
Not a "from scratch" recipe, but a couple of good hints
