Your Best Recipe for Pork Loin Roast?

Hi Everyone!

I have a large pork loin roast and am trying to figure out what to do with it. I would love to hear your favorite recipes for pork loin. I've already checked a few of my favorite recipe sites and found recipes there, so I'm not looking for more of that sort of thing. I would like to know how YOU cook roast pork. I'm interested in recipes which YOU have made before and which YOU enjoy.

All such recipes are welcome and greatly appreciated; however, for this particular roast I'm looking for something relatively simple as I will need to use ingredients that I have on hand. I love to try new things, love southern recipes, southwestern recipes, TexMex, that kind of thing, love hot peppers. (other nationalities and regional methods also welcome!) I would like the roast to come out 'melt in your mouth' and 'fall off the bone' (although there is no bone) tender if possible.
