So as not to hijack the substituting oil thread, I'll start a new thread for easy bread recipes. We're not talkin' bread machine here.....;~)
from Recipes for a Small Planet circa 1975 [groan]
Irish Soda Bread
2 cups whole wheat flour
1/2 tsp salt
1 tsp baking soda
1/8 tsp ground cardamom - optional
1 egg, beaten
1 TBS honey
1 cup yogurt or buttermilk
1. Stir the dry ingredients together.
2. Beat the honey and buttermilk into the beaten egg; gradually pour this mixture into the dry ingredients. The combined mixture will be dry like a yeast bread dough. Blend it with your hands to work all of the flour in. If it is too dry, add a little buttermilk; if too wet, add more whole wheat flour.
3. Knead the bread for about 5 minutes, then shape into a flat but round loaf.
4. Place the loaf on an oiled baking sheet; cut two parallel slashes in the dough about 1/2 inch deep. This allows the dough to rise during baking without cracking.
5. Bake the bread at 375° for 25 to 30 minutes, until it is well browned and tests done like yeast bread.
Variations:
Currant Soda Bread: Add 1 cup currants or raisins to the dry ingredients.
Caraway Soda Bread: Omit the cardamom. Substitute 1 teaspon of crushed caraway seeds.
