We just butchered seventeen chickens (four old layers and thirteen four-month-old Speckled Sussex cockerels) and two geese yesterday. We have a plucking machine and the chickens are a snap - scald them for two minutes at 145 degrees and then put them in the machine for a minute or two and you've got a clean carcass. But geese are a different story. We managed to get the white Chinese looking decent, but the Toulouse was slightly overcooked and we ended up just taking the breast. Should have done the legs, too, but we didn't have the energy to hassle with them! I did an internet search, and most people seemed to agree that it's a rough job. You can't wax with only two geese and it also seems like an awful lot of trouble to set that up. Any tricks out there?

Hi, Hay! The trip to France was wonderful but I was sick the first few days and had to seek medical care! Still, their medical costs are incredible - 26 euros for an x-ray and they gave you the film and a written diagnosis ten minutes after they took the images.
And then because of demonstrations, our plane from Toulouse to Paris got in late so we missed our flight from Paris to Philadelphia. Air France had to put us up in a hotel in the airport complex until the next day. It sounds as though it would be even harder to get home now, though, with all the demonstrations and strikes about Sarkozy's retirement age proposals.
But in between we had a lovely time, visiting with friends and seeing the sights, and eating all of that good food.
That is a very discouraging sign, to see the behaviour of a few on that great country. I have heard so many bad things said about France, but it will always be very dear to my heart. I loved the people when I was there, I found so many beautiful sights, I always thought it was glorious...I'm glad in spite of some negatives you still had a great time...Hay
We did have a wonderful time, but I'm not sure I'll ever get DH on a plane again! We do love France and have thought of moving there, but it would be hard to leave the grandkids! And all of our friends, of course!
