Roux in the microwave

I know. I know. I didn't believe it myself. My Momma who is a great cajun cook from way back, told me about this. I don't know if she discovered it on her own or got it from somebody else. I thought she was losing it but I gave it a try and it makes the best roux you can believe and so easy.

1 cup AP flour
1 cup oil

Combine well in a microsafe bowl. Cook on high for 5 minutes, stirring every minute. Then cook in 1 minute intervals until the roux is as brown as you like. You can store any that you don't need in the fridge in a glass jar with a lid.
