When do I plant FENNEL in TEXAS?

When do I plant Fennel in Texas, Zone 8a?
I always had the hardest time to grow this amazing vegetable. I am from Italy and we eat fennel daily.

I slice my fennel very thin and dress with salt, pepper and olive oil.
Love it !!
You can also slice the fennel in section and grill it. Dress with S+P+OO or you can add some balsamic vinegar before grilling the fennel to give a sweet taste. Yummy

We do the above and add a dusting of freshly grated Parmesan as it comes from roasting in the oven for about fifteen or twenty minutes or off the grill. We eat it as part of an antipasti tray. It's great shredded or sliced with a mandolin and then a vinegar and oil dressing. Accompany the later with shredded carrots and fresh or grilled garden tomatoes.

Italian bulbing fennel needs a very long, cool season so I'm not sure it will grow in zone 8. I've had no luck with true Italian fennel in 7b. I've tried both fall and Spring planting. There are folks who grow bronze fennel. It's all fern and they swear by the flavor, but that's not the same at all.

I just want to know the exact time for seeding ... if anybody had good success with the FENNEL

I'd say you plant the seeds right about now, since you're in a warmer climate. I can grow it down here in an even warmer climate (sw Fl), and I plant it in October. Boy, you couldn't stop the stuff from growing back in Northmen California
