2 c milk
3 egg yolks slightly beaten
1/2 c sugar
1/8 t table salt
1 c cream , light or heavy
2 t vanilla
mix sugar salt and egg yolks . pour on milk . cook in double boiler until mixture coats spoon .
cool , strain , add cream,vanilla and freeze
Makes 1 1/4 quarts or 6-8 servings
Mix 1 part Ice cream salt (rock) with 8 parts crushed ice . Fill freezer tub with this mixture well above the line of the mix in the cream container . Turn crank slowly increasing the speed as the mixture begins to freeze . (about 15 minutes) To complete freezing process, drain off brine and pack tub with a mixture of 3 parts ice to 3 parts salt . Let stand for at leasr 30 minutes before serving
