Eggs for dinner and how do prefer to cook them anytime?

I eat eggs for whatever meal if I feel like it be it breakfast, lunch, dinner or inbetween. It makes for a great dinner when I don't want to fuss and want an easy to make tasty meal. Inexpense too. While that is no long a factor, there were times in my life were money was so tight it was really difficult to buy the weeks groceries and eggs could be counted on for a great value.

I like eggs hardboiled for snacks and either sunnyside or over easy when fried. I haven't had scrambled in years but might make them that way next time.

So I was wondering who else likes to eat eggs for whatever meal they are making and not just the traditional breakfast? And how do you like to prepair them?

I forgot French Toaste. I love French toaste. I love it for breakfaste or just for a snack LOL!

Me too, I actually hard boil all my store bought eggs if any are leftover when I buy new fresher ones next time I go shopping. Then I snack on the hard boiled ones.

DH drives truck so he is gone at night sometimes and I make scrambled eggs for supper.And I love pouched eggs on toast.And can`t forget deviled eggs yum yum

With so many vegetables coming in from our garden I've been doing a quick saute of things like onion, small diced yellow squash, zuchinni, green pepper. I cover my scrambled eggs with this mixture then dice up a fresh ripe tomato on top. I do add a little basil and course ground pepper. It is SO GOOD. I will miss the veggies after the garden is all done. Sometimes I'll sprinkle a little finely shredded mozzarella cheese over the whole thing too.

Although I rarely eat them, my favorite dishes to use eggs are: custard, bread pudding, and the most unappreciated dessert in the world - Tapioca. Yum!! Oh, and french toast with raspberry jam is great too.

I just love a scrambled egg sandwich with sauted onions and peppers and whatever cheese. Bread can be anything I have.

Oh, and I use my older eggs for egg whites to make Angel Food Cake from scratch. Not that hard to do, freezes very well, and low fat and cholesterol. Winner, winner, chicken dinner as #1 son likes to say.

So glad I've eaten breakfast or I'd be starving after reading this....LOL!!!! We sometimes have breakfast for dinner too. I've made scrambled egg, cheese & ham sandwiches....dice the ham. heat it, add to eggs when they are almost done, add cheese. I use hoagie rolls, hollow out the bottom, add the eggs.
