I poked a finger into the buckets that are housing my sweet potatoes yesterday. To my great suprise and happiness, each of the plants had produced several eatin-sized tubers. Its too hot out right now to eat them, but I am looking forward to the first cold snap. They will be on the plate in a flash.

Congratulations! What'd you grow them in? 5-gallon buckets?
3 of them are in 5 gallon buckets (1 plant per bucket) and 4 of them are in rubbermaid totes (2 plants per tote).
Another question about sweet potatoes. We planted a field of them at our
Food Bank Community Garden. We understand theyneed to be harvested before our first frost (usually Oct. 15). Once harvested they have to "cure" before eating.
How long should they "cure".
