I've started to harvest my first crop of lima beans (Fordhook No. 242). Does anyone know how long you should cook (boil) the freshly-shelled beans?
(I found all kinds of weird info I found on the internet. One source said to shell then boil the beans for 90 minutes; another said to boil the shelled beans for 5 minutes, peel, and cook for another 15 minutes. Really? You have to peel FRESH limas???)
Any help is greatly appreciated!

I'd go with ten, but that would tend to be on the crisp side. 12-15 is the standard direction I see.
The one that says 90 minutes is probably talking about dried beans, not fresh.
Simple enough to boil for a little bit, then scoop one out to see if the texture suits you.
We cook 'em close to an hour, or they're way too al dente and green tasting for us.
