I used tomatoes from my garden and the recipe is from rtl850nomore.
Tomato Coulis using fresh toms
3 tbsp olive oil
1 med onion, minced
3 lg tomatoes, peeled, seeded, and diced or 6 plum toms
3 bay leaves
3 cloves chopped garlic
hot pepper flakes to taste
1 tsp chopped fresh thyme
salt and pepper
Saute onion and garlic, add everything else and simmer until it is the thickness you want. Remove bay leaves. I like to grate parmesan cheese on mine when I serve it but then I put cheese on everything.
It was very good and so easy.
