Jalapenos , favorite stuffing ?

I like to slice my peppers in half , stuff , then bake . My problem is , I need to try new stuffing recipes.
What are some of your favorites ?
I don't need the additives , such as shrimp , clams , ect . I just want the basics , cheese , what kind and how much of each , and so on . Herbs ?
Thanks a lot and DH and I usually put away about twenty halves each . Love those things better than ice cream . digger
