Okra Fritters
1/4 cup cornmeal
1/4 cup flour
1/2 cup evaporated milk
1 egg
1/2 cup chopped onion
3 tablespoons grated parmesan cheese
1/2 tsp salt
1/4 tsp red pepper
3 tablespoons chopped parsley, fresh
2 cups sliced okra
Combine all ingredients. Drop by spoonfuls into hot oil. Fry until golden. Drain on paper towels.
