My chicken house is an old green house and I would lke to plant something tall and full that would die back in the winter, esp. on the South facing side. I have thought of several things but would like for it to be food producing. I want to give them some shade from the morning sun. I live in Pleasanton TX which is hot as heck, low rainfall and humid. I am trying to plan some fall landscaping and am stalling out on ideas for this. Thanks for help.

How about a fig tree? It would need supplemental watering until established, but then it should be fine. It would be bare in winter, but full enough to provide shade in the summer and produce fruit. They also grow relatively quickly.
