plum and peach ripening off tree?

The birds are savoring the fruit before it ripens fully. Will it ripen if removed from tree when it is green or yellow? I have 4 plum and one peach tree and it is a constant battle to get to them before the birds. The fruit is wonderful (when I get to it first).

I feel your pain Susie.
When I was a kid I wanted to be a bird, fly all around but now that I' in my 70's I have very little use for the birds.
My blueberries, netting over, fruit trees, well my first year for fruit, have 4 apple, a pear and a peach which are loaded with fruit..........Birds Beware.......

I would say that fruit removed more than 5 days before full ripening will lose some sweetness and flavor.

I experimented........... I pulled some plums off that had a pink blush to them and they ripened the next day. I pulled some peaches off but did not have the same luck. They were still a little unripe after 2 days. Having a tough time keeping the birds off but next year I will have the netting up. Canning the peaches and making red plum jelly.
