Salad Burnet and Sage Bolting

Both my salad burnet and sage came back from last year, and they already have lots of flower buds. Will they still have a good flavor after they flower?

Is there any resource - some sort of chart or something - that tells which herbs typically maintain a good flavor after they flower and which ones don't?

Both of those plants have always bloomed in spring for me...including here in Texas...it is a natural process of the plants...I have noticed any change in flavor or strength of flavor after they bloom.

An elder herbalist that I knew always told me that the perennials need to bloom and her words...'show off a bit' at the start of each season....but the annuals need 'to put on one last show' before dying...the annuals I use most are dill, chervil, parsley, and cilantro...where this holds true...she also taught me to keep the blooms off of my basil as much as possible because she believed it reduced the flavor...I don't know of any chart and would be interested if someone has such a reference.
