This might have already been posted before. I have seen it around on the Net. I think it was originally a Paula Dean. Anyway, I tried it and it's a keeper for sure--easy to prepare and so very good!
Feed a crowd. This makes 16 dumplings.
APPLE DUMPLINGS
• 2 whole Granny Smith Apples
• 2 (8-oz cans) Crescent Rolls
• 2 sticks butter
• 1-˝ C sugar
• 1 tsp vanilla
• ˝ tsp cinnamon plus some to sprinkle on top
• 1 can (12-oz) Mountain Dew soda
Peel and core apples. Cut each apple into 8 wedges. Roll each apple wedge in a triangular crescent roll. Place in a 9 x 13 buttered casserole or cake pan.
Melt butter, add sugar and cinnamon and barely stir. Remove from heat; add vanilla, stir, and pour entire mixture over apples. Pour Mountain Dew around the edges of the pan. Sprinkle dumplings with cinnamon and bake at 350° for 45 minutes. Serve with ice cream, and spoon some of the sweet sauces from the pan over the top.
NOTES: I made ˝ the recipe—8 dumplings. I used a 6 ˝ x 8 ˝ baking dish which was just right. I added a little lemon juice to the apples and used a little more Mountain Dew than called for so there would be more sauce. Bake until WELL browned to be sure dumplings are done all the way through. Serve warm. Reheat before serving left over. If serving with ice cream, serve ice cream in a separate dish--otherwise it melts all over the dumplings and dilutes the taste.
