Overweight kitty!

I have just adopted a 2 year old kitty from the shelter where I volunteer. She had been adopted from our shelter as a kitten, and the people recently brought her back because they no longer wanted her (ooooohhhhh, unbelievable....). In the meantime, they had all four paws declawed, AND they allowed her to become tremendously overweight.
I really want to get her weight down, but safely. She doesn't much enjoy being on her feet, so exercise will have to be in spurts. You can tell how small she SHOULD be, by her little legs and feet, and head, and I think supporting all that fat is real hard on her legs.
I know there's special diet type kitty food out there, and I understand about not having food around all the time so she can't nibble (which is going to be hard for my other animals to get used to, but they will adapt all right). I'd like to hear other folks' experiences with dealing with an overweight kitty. Anything you can tell me, fellow kitty lovers?
