I have been roasting red, orange and yellow peppers along with mushrooms and onions. I just add a small amount of olive oil and salt and pepper, roast at 375 for about 45 to 55 minutes. I do enough so I can eat them for several days. I would really like to know what else I can add or do for a little variety? I tried adding baby carrots but they didn't cook well for some reason???? I love doing this and like that I can use them for omelettes, or I add them to maranara sauce over linguni. It would be nice to hear what you all do. meems
