Fried Ice Cream

Austin, TX(Zone 8b)

As part of my New year's Resolutions....I'm going to post my recipe for Fried Ice Cream that's been sitting on my desk since August.
Hope someone likes it......

8 slices of white bread with crust trimmed off (you can also use sponge cake slices)
vanilla ice cream of your choice
2 eggs
1/2 tsp vanilla
1 Tbsp sugar
1/4 tsp cornstartch
10 oz. whole raspberries
Lay a bread slice in your left hand, place a small scoop of ice cream in the middle of slice, and form bread into a ball that covers the ice cream. Wrap each piece in aluminum foil. Freeze for at least 2 hours. Preheat oil to 375. Beat eggs, vanilla, sugar, and cornstarch in a bowl. Take frozen ice cream balls from freezer and remove foil. Dip each into batter. Deep fat fry to a golden brown color....about 1and1/2 to 2 minutes. Set on paper towel to drain. Serve immediately on chilled dessert plates. Top with raspberries. I've made these for a crowd with someone else serving them up as I fried them. You can vary the toppings and also the ice cream.
