Next years party . . .

We hosted a bash on Dec.26th for family and friends. 30 adults and 10 children from 10 yrs down to 3 months. I did rib roasts on a Traeger and salmon over briquettes. I will do something different next year to simplify. The salmon is caught, cooked, and served by a brother so that is not an issue; it always receives raves. I do not want to do ham as that is what I serve @ New Years. Nor do I want to do sandwiches. Pork & beef ribs in oven? Would briskets be ez? You do not have to worry about over cooking those, do you? I have an electric roaster as do several friends to borrow. I am so 'wired' when cooking rib roasts for a crowd to not over cook that I do not enjoy the day/evening. My DH is a fabulous 'clean up' guy but once friends/family start showing he is part of the crowd. Help, I have only 360 days to get this figured out!!
