Smoked Salmon Christmas Dinner Starter!

Although I have put this on, someone asked me to put it on the full recipe forum.
It is easy and is a great Christmas Dinner starter.
What you need.
9oz smoked salmon.
4oz cream cheese.
2 tbsp doublethick cream.
½ lemon, juice only.
2 tbsp chopped chives (plus some extra chives to sprinkle over the top).
pinch of sugar.
salt and freshly ground pepper.
Now the fun starts.
Pop all the ingredients into a blender and pulse until it has a consistency that you desire. For serving as a starter with salad and oatcakes or toast I like the pate to be a little rough. Plenty of pepper is good but go easy on the salt, as the smoked salmon will be salty already.
Then once made to the constituency you want rough or smooth, place it in buttered ramekin dishes, these are small bowls with enough pate to serve one person in, or use any small bowls if they are the same size. Smooth the tops off so they are nice and clean and put them in your fridge to get cold. Get them out about 40 minutes before serving and either serve them in the bowls, or with a very fine knife go round the outside of the pate. If you have buttered the dish well they should come out when you turn them over. Put the plate on top first and then turn them over.
Serve with cold or hot sliced toast, or oatcakes, chives or parsley sprinkled over the salmon, and of course lemon wedges!
You can get some olive oil add some crushed garlic, stir well and lightly brush on the toast. It is also nice with Italian breads if you have an Italian shop near you!
