freezing cooked meal size portions.

My MIL has stopped cooking and we are all trying to fill the freezer with things she can just pop in the microwave..or warm on stove top, such as soup or stews. I have no experience what-so-ever in freezing things. I am interested if you cook up fresh veggies, if they freeze and reheat. Im thinking things like, yellow squash and onion,,,butternut squash made somehow...maybe some potatoe dishes. Im clueless. I need to make some caseroles and divide them into two portion sizes and freeze together. If you make individual portions on individual plates, the MIL only warms one and shares with the FIL.

Any recipes or techines welcome...pot roast or beef stew is about my whole freezing expertice.
