Post your favorite Christmas recipes here, as many as you like. Whether they are drinks, appetizers, entrees, sides, or desserts, all are welcome. Here is one of mine:
Macaroni and Cheese
16 oz. uncooked elbow or wagon wheel pasta
2 tbsp. flour
4 tsp. cornstarch
1/2 tsp dry mustard
24 oz evaporated skimmed milk
2 cups(8 oz.) Cotswold cheese, shredded*
1 cup Cheddar cheese, shredded
2 tsp. Worcestershire sauce
1/2 tsp. ground black pepper
2 tbsp. crushed cornflakes
2 tbsp. paprika
Non-stick cooking spray
Preheat oven to 375F.
Cook pasta according to package directions, but omitting the salt. Drain and set aside.
Combine flour, cornstarch and mustard in large saucepan; stir in milk until smooth. Cook over low heat, stirring occasionally, until slightly thickened, about eight minutes.
Remove from heat, stir in cheese, Worcestershire sauce and pepper. Add pasta, mix well.
Spray 3-quart casserole dish with the non-stick cooking spray. Spoon mixture into casserole dish; sprinkle cornflake crumbs and paprika over pasta mixture.
Bake twenty minutes or until bubbly and heated through. Makes twelve (1 cup) servings.
* Cheddar cheese can be substituted for the Cotswold cheese, just add 4 tsp. chopped chives and 2 tsp. minced onion to the 3 cups Cheddar.
