I do not like peeling potatoes. And typically, russett's are the only potatoes I do peel. But yesterday I did some research and per some on-line authorities, Yukon Golds make the best mashed potatoes. Well, their skins are golden and thin so from now on I will scrub, cut, and boil YG's for mashed potatoes. So, come Thanksgiving day, with all that time free'd up I will pour another glass of wine as the unpeeled YG's boil.
