Coconut macaroons a simple recipe.
What you will need, not much LOL!
2 egg whites
3½oz caster sugar
5½oz desiccated coconut
1 tbsp orange juice optional but it does make them taste nice, although you could use lime, or lemon.
How to make them, the fun starts here!
Preheat the oven to 180C/355F/Gas 4.
Use your hands to mix the egg whites, sugar, coconut, and lime juice in a bowl until they lightly come together.
Now with wet hands, press the mixture into a flat, square shape about 1/2in high.
Use a small upturned glass to cut out small rounds or a small pastry cutter if you have one, and then put on a lightly oiled or nonstick baking tray.
Bake for 12-15 minutes in the center of the oven until very lightly golden, just touched with colour, not brown, just touched!
Then cool the macaroons on a wire rack, and store in an airtight jar or a tin.
If I know the Children are coming I double the mixture and make two lots at once, the reason being they are so easy to make, plus they can be made two to three days in advance! Although they do not last very long in this house.
There is another reason if left for a couple of days in an airtight jar or tin, they taste better, as the coconut works wonders on them.
Use dessicated coconut as it is dried and is cheaper, and saves mucking about.
Plus you do not get bits of husk and fibers getting stuck in your teeth!
You can add warmed chocolate over the top, and dust with coconut as an extra treat, if you so wish. Use good chocolate though not rubbish.
