Here is a recipe for an pudding that tastes almost like an 'Almond joy' candy bar. You will need a recipe for homemade Chocolate Cream Pudding(or store bought chocolate pudding, but it does not taste as good ,as if you made it from scratch) a recipe for Coconut Cream Pudding and a half cup of toasted sliced almonds.
Toasted Almonds
1/2 cup sliced almonds
Preheat oven to 350F. Spread almonds on baking sheet and toast 5 minutes, shake pan occasionally, or until golden brown.. Set aside to cool. Chop medium fine.
Chocolate Cream
2 1/2 ounces of unsweetened chocolate
1 quart milk
1/3 cup cornstarch
1 cup sugar
1/2 tsp. sea salt
2 egg yolks, beaten
1/4 cup egg pasteurized whites
2 tsp. vanilla
Melt chocolate in a double boiler, add milk slowly and bring to scalding point. Beat egg yolks and set aside. Mix cornstarch, sugar and salt; add to hot milk mixture. Cook thirty minutes in double boiler, stirring often. Add mixture slowly to beaten egg yolks and set aside to cool.
Beat egg whites until stiff and fold into partly cooled pudding. Add vanilla chill.
Coconut Cream Pudding
1/2 cup sweet flaked coconut
6 oz. soft silken tofu, drained
1/3 cup sugar(omit if using flavored tofu),
5 tbsp. cornstarch
1 14 oz. can coconut milk
1 tsp. vanilla extract (omit if using flavored tofu)
1/8 tsp. coconut extract
Preheat oven to 350F. Spread coconut on baking sheet and toast 5 minutes, shake pan occasionally, or until golden brown.. Set aside to cool. Chop medium fine.
Blend tofu in blender or food processor 2-3 minutes or until smooth. Set aside.
Whisk together sugar and cornstarch in saucepan. Whisk in coconut milk and cook over medium-high heat 8 minutes or until thickened, whisking constantly.
Remove pan from heat. Fold in tofu, vanilla and coconut extracts and coconut flakes; chill.
To assemble dessert:
In glass serving cup, layer in order: coconut cream pudding on the bottom, place chocolate cream pudding on top of the coconut layer and then top with the chopped toasted almonds. Enjoy!
