Bison meat: recipes, opinions?

I just made chili with a` pound of ground bison. I'm not too sure how I like the flavor. It's stronger than I expected and a little 'gamey'. Does anyone use it and, if so, how? Got any outta sight dishes I could make with the rest of it?
